Lentil Carrot Curry

1.5 Cups Onion, Chopped
1 Cup Carrots, Chopped
2 Cups Green Lentils, rinsed
6 Cups water
1 Tbsp ground coriander
1 Tbsp Curry Powder (I use Madras Curry powder)
1 Tbsp Ginger paste or fresh grated ginger
1 tsp salt
Combine all ingredients into the pressure cooker, cook for 4 minutes of hissing and let the pressure drop naturally. Unlock the top and enjoy over a bed of your favorite whole grain!
